OK to start everything off I Throw everything in the large pot.
The chicken. It's ok if there is still meat on the bones.  Just throw it all in.
The veggies. I throw in what I usually keep in the fridge and pantry.  3 Carrots, 2 stalks of celery, A large onion chopped into quarters. You can put any veggies you want in here they just add to the nutrients.
Water. I add enough water to ensure that everything is covered in the pot(about a half gallon).
Salt.  Add about 1 Tablespoon of salt.

Pretty gross looking but it is so good for you.
  1. Bring broth to a rolling boil. while stirring every  couple minutes.
  2. Cover and reduce heat so that it stays at a low simmer. It needs to stay boiling.
  3. Let boil for two days(48 hours).  Make sure to stir every 4-8 hours to keep from sticking and check water level(if the water level has lower just add more water).
  4. Once the 2 days are up turn off heat and let cool down for an hour.
  5. Line a large bowl with a large bread cloth and slowly pour the contents of the pot into the bowl while trying not to let the cloth fall into the bowl.
  6. Grab all four corners of the cloth and let the broth strain out.
  7. Fill pint jars with broth but leave about an inch from the rim of the jar.
  8. Loosely screw on the lid and place in the fridge overnight to cool down.
  9. Then freeze but make sure the lids are still loose so air can escape.
